Why Wait for The Weekend? Anytime Waffles….


waf6We got a waffle maker. I am a real pancake lover, mostly Danish Aebleskiver but also crepe like pancakes. Anytime I can, I wake up and prepare pancakes. But, sometimes it is nice to try something new, so we decided to buy a waffle maker.

Now, we have dairy allergies in the house, so eating waffles out is not possible. Waffles are always made with butter and or buttermilk and or milk as well….

So I have been looking at, probably, 80 recipes. Anything from big websites to blogs. As soon as I saw buttermilk, I went onto the next. I also skipped those with cornstarch. Seems totally un-needed in a light waffle.

Finally I found one I liked….. ‘The Bestest Belgian Waffle Recipe’ from food.com. But still adaptations were needed.

My version of really light, crispy on the outside, fluffy on the in-side Waffles is-

2 eggs separated

1/4 cup sugar

Vanilla paste

2 cups flour

2 flat spoons of baking powder

1/2 cup oil (possibly a bit less)

1 can coconut milk- tried with both Light and full fat- both work perfectly

100 m”l (3.3 oz) rice milk or water

Optional- add a bit of cinnamon or cocoa for an additional taste….

How to prepare the dough mix:

Whip the egg whites with half the sugar until it becomes firm – move to a separate bowl.

In the used bowl mix egg yolks, vanilla, remaining sugar, coconut and rice milk (or water). Slowly add the flour and baking powder and mix well.

Lastly, fold in the egg whites and let rest in the fridge for 15 minutes.

Prepare the Waffles on a waffle maker, spraying it lightly with oil before the first batch- after that you don’t need to spray the pan.

Definitely a 5 star recipe that will be a regular in our house!
